β¨ Classic Overnight Pasta Salad β¨
This was the star of every graduation party, backyard BBQ, family reunion, and holiday buffet growing up. π₯β€οΈ
Cold, colorful, creamy, and always made the night before so all the flavors could blend together perfectly. One scoop was never enough! π€€
π Ingredients:
- 1 lb rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 green bell pepper, chopped
- 1/2 red onion, finely diced
- 1 cup cheddar cheese, cubed
- 1 cup ham or salami, chopped
- 1/2 cup black olives, sliced
π₯£ Dressing:
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
π©βπ³ Instructions:
- Cook pasta according to package directions. Drain and rinse under cold water.
- In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, onion, cheese, meat, and olives.
- In a separate bowl, whisk together all dressing ingredients until smooth.
- Pour dressing over pasta mixture and toss until everything is coated evenly.
- Cover and refrigerate overnight for the best flavor.
- Stir before serving and enjoy cold.
