These cookies are soft, chewy, lightly sweet, and perfect with coffee or tea. I make them all the time when I want something healthy but still delicious. The lemon zest gives them such a fresh flavor, and the cranberries with walnuts are the perfect combination. 🤤✨

🛒 Ingredients:

  • 1 cup oatmeal (90g)
  • 50g dried cranberries
  • Zest of 1 lemon
  • 1/4 cup walnuts, chopped (30g)
  • 1/4 cup dates, chopped (35g)
  • 1 egg
  • 2 tablespoons butter, melted (30g)
  • 1 tablespoon honey or maple syrup (optional for extra sweetness)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon vanilla extract

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine oatmeal, cranberries, walnuts, chopped dates, cinnamon, baking powder, lemon zest, and salt.
  3. In another bowl, whisk together the egg, melted butter, vanilla, and honey if using.
  4. Pour wet ingredients into the dry ingredients and mix until fully combined.
  5. Let the mixture sit for 5 minutes so the oats absorb moisture.
  6. Scoop small portions onto a parchment-lined baking tray and gently flatten them.
  7. Bake for 12–15 minutes or until lightly golden around the edges.
