These Oatmeal Scotchies Cookies are a delightful blend of chewy oats and rich butterscotch chips, making them a perfect treat for any occasion. The warm spices of cinnamon and nutmeg add an extra layer of comfort to these irresistible cookies.

Ingredients
1 ¼ cups butter, softened
¾ cup brown sugar (160g)
½ cup granulated sugar (100g)
1 large egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour (180g)
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
2 cups old-fashioned oats, uncooked
1 ½ cups butterscotch chips
Directions
Preheat Oven: Preheat your oven to 375°F (190°C).
Cream Butter and Sugars: In a large mixing bowl, or in the bowl of a stand mixer with a paddle attachment, cream together the softened butter, brown sugar, and granulated sugar. Scrape the sides of the bowl as needed to ensure all ingredients are well combined.
Add Egg and Vanilla: Add the egg and vanilla extract to the creamed mixture and continue to mix until fully incorporated.
Combine Dry Ingredients: In a separate bowl, combine the all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the butter and sugar mixture, mixing until fully combined.
Add Oats and Butterscotch Chips: Mix in the old-fashioned oats until evenly distributed. Hand stir in the butterscotch chips, being careful not to over-mix the dough.
Scoop Dough: Use a medium size #24 cookie scoop to place dough onto a parchment-lined baking sheet, spacing the cookies at least 2 inches apart.
Bake Cookies: Bake in the preheated oven for 9-11 minutes. For chewy cookies, bake for 9 minutes or until the edges are set. For crispier cookies, bake for 11 minutes until the edges are golden brown.
Top with Butterscotch Chips: Immediately top the hot, freshly baked cookies with additional butterscotch chips for an extra touch of sweetness.
Cool Cookies: Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a cooling rack.
