Chicken and veggies on skewers in an air fryer
When I want something healthy that tastes great, this is one of my favorite dinners. The edges of the chicken get a little charred, and the veggies get soft and sweet.
🧂 Things you need
Two pieces of chicken breast, cut into pieces
1 sliced red bell pepper
1 yellow bell pepper, cut into slices
1 zucchini, cut into slices
1 red onion, cut into pieces or layers
For the marinade:
2 tablespoons of olive oil
1 tablespoon of lemon juice
2 cloves of garlic, chopped
1 teaspoon of paprika
½ teaspoon of black pepper
½ tsp of salt
1 teaspoon of mixed herbs or oregano
How to make it
- Put the chicken in a marinade
In a bowl, mix together the lemon juice, garlic, olive oil, and all the spices. Put in the chicken and mix it up well so that everything is covered.
Let it sit for 20 to 30 minutes if you can. It makes a difference. - Make the skewers
Put the chicken, peppers, zucchini, and onion on skewers, switching them up as you go. Don’t pack them too tightly so that air can flow through. - Get the air fryer ready
Set it to 375°F (190°C). - Fry in the air
Put the skewers in the basket (you can line it with parchment paper like in the picture).
Cook for 10 to 12 minutes, flipping halfway through.
Cook the chicken for another 5 to 7 minutes, or until it is fully cooked and a little bit charred.
How I serve it
I usually serve these with rice, flatbread, or even just a simple yogurt dip on the side.
💡 A real tip:
Soak wooden skewers in water for 20 minutes before using them so they don’t catch fire.
