Ingredients
8 oz (225 g) cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup pepper jack cheese, shredded
1 cup sweet corn kernels (cooked and cooled)
2 tbsp mayonnaise
1 tbsp ranch seasoning
1 tsp Cajun or voodoo seasoning
1/2 tsp smoked paprika
2 green onions, finely sliced
2 tbsp chopped fresh cilantro
1 tbsp lime juice
Coating
1/2 cup crushed tortilla chips
1/4 cup cooked bacon bits
1 tsp Cajun or voodoo seasoning
2 tbsp finely chopped parsley or cilantro
Instructions
In a large bowl, combine cream cheese, cheddar, pepper jack, mayonnaise, ranch seasoning, Cajun seasoning, and smoked paprika.
Fold in the corn, green onions, cilantro, and lime juice until evenly mixed.
Refrigerate for 30–45 minutes until firm enough to handle.
In a separate bowl, mix the crushed tortilla chips, bacon bits, additional Cajun seasoning, and parsley.
Scoop about 1 tablespoon of the cheese mixture and roll into bite-sized balls.
Roll each ball in the coating mixture until fully covered.
Chill for another 20 minutes before serving.
Optional Street Corn Drizzle
Mix:
2 tbsp sour cream
1 tbsp mayonnaise
1 tsp lime juice
Drizzle over the bites and sprinkle with extra cilantro and Cajun seasoning before serving.
Yield
Makes about 18–20 cheese ball bites.
