🍰✨ Light & Fluffy “Best Dessert Ever” Yogurt Berry Cake ✨🍓
My sister just made this and said she followed the recipe to a T… and honestly? It turned out INCREDIBLE. 😍
It’s light, soft, not overly sweet, and has that perfect melt-in-your-mouth texture. Even picky eaters (yes, the hardest critics 😅) loved it!
If you’re looking for a dessert that feels indulgent but still fresh and airy, this is the one.
🛒 Ingredients:
- 3 eggs
- 1/2 cup sugar (or honey for a lighter version)
- 1 cup plain Greek yogurt
- 1/3 cup vegetable oil or melted butter
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- Zest of 1 lemon (optional but amazing 🍋)
- 1 cup mixed berries (fresh or frozen)
✨ Optional topping:
- Powdered sugar
- Extra berries
- Light whipped cream
👩🍳 Instructions:
- Preheat oven to 180°C (350°F). Grease or line a baking pan.
- In a bowl, whisk eggs and sugar until light and slightly fluffy.
- Add yogurt, oil, and vanilla. Mix until smooth.
- Sift in flour and baking powder, then gently fold until combined.
- Add lemon zest (if using) and fold in berries carefully.
- Pour batter into the pan and smooth the top.
- Bake for 30–35 minutes or until golden and a toothpick comes out clean.
- Let it cool, then dust with powdered sugar or top with berries.
💡 Tips:
- Don’t overmix or it won’t stay fluffy
- Toss berries in a little flour before adding so they don’t sink
- Serve chilled for an even lighter texture 😍
It’s sweet, soft, and feels like a bakery-style dessert… but so easy to make at home! 🍰
