⭐ INGREDIENTS

Cookies

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon

Caramel Filling

  • 20–24 soft caramel candies (Werther’s soft caramels work great)
  • Optional: 1–2 tbsp heavy cream (for extra-gooey centers)

Coating

  • 1/4 cup granulated sugar
  • 1 tsp cinnamon

👩‍🍳 INSTRUCTIONS

1. Prepare the caramel centers

If using cream (optional but excellent!):

  1. Microwave caramels + cream in 10-second bursts until soft and moldable.
  2. Roll each caramel into a small ball (about marble size).
  3. Freeze for 10–15 minutes so they don’t melt out of the cookie.
