These cookies are soft, chewy, lightly sweet, and perfect with coffee or tea. I make them all the time when I want something healthy but still delicious. The lemon zest gives them such a fresh flavor, and the cranberries with walnuts are the perfect combination. 🤤✨
🛒 Ingredients:
- 1 cup oatmeal (90g)
- 50g dried cranberries
- Zest of 1 lemon
- 1/4 cup walnuts, chopped (30g)
- 1/4 cup dates, chopped (35g)
- 1 egg
- 2 tablespoons butter, melted (30g)
- 1 tablespoon honey or maple syrup (optional for extra sweetness)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 teaspoon vanilla extract
👩🍳 Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine oatmeal, cranberries, walnuts, chopped dates, cinnamon, baking powder, lemon zest, and salt.
- In another bowl, whisk together the egg, melted butter, vanilla, and honey if using.
- Pour wet ingredients into the dry ingredients and mix until fully combined.
- Let the mixture sit for 5 minutes so the oats absorb moisture.
- Scoop small portions onto a parchment-lined baking tray and gently flatten them.
- Bake for 12–15 minutes or until lightly golden around the edges.
- Let cool for a few minutes before serving.
