Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 can (14 oz) sweetened condensed milk
1/2 cup fresh lemon juice
1 tablespoon lemon zest
2 cups whipped cream cheese
1 cup shredded coconut, divided
Lemon slices, for garnish
Directions:
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.
Press the crumb mixture into the bottom of an 8×8-inch dish lined with parchment paper to form the crust. Place in the refrigerator to set for at least 30 minutes.
In a large mixing bowl, beat together the sweetened condensed milk, fresh lemon juice, lemon zest, and whipped cream cheese until smooth and creamy.
Fold in 1/2 cup of shredded coconut into the cream cheese mixture.
Pour the cream cheese mixture over the chilled crust and spread evenly.
Sprinkle the remaining shredded coconut on top.
Refrigerate for at least 4 hours or until set.
Garnish with lemon slices before serving. Cut into bars and enjoy!
