Chicken Chorizo Jambalaya

Ingredients:
1 tbsp olive oil
2 chicken breasts, diced
1 chorizo sausage, sliced( turkey sausage or smoked beef sausage)
1 onion, chopped
1 red pepper, chopped
2 garlic cloves, crushed
1 tsp paprika
1 tsp cayenne pepper
250g long grain rice
400g can of chopped tomatoes
450ml chicken stock
2 spring onions, sliced
Salt and pepper to taste
Directions:
Heat the Oil: Heat the olive oil in a large pan over medium heat. Add the diced chicken and cook until browned on all sides.
Add Sausage and Vegetables: Add the sliced turkey sausage, chopped onion, and red pepper to the pan. Cook for another 5 minutes until the vegetables soften.
Add Garlic and Spices: Stir in the crushed garlic, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
Add Rice and Tomatoes: Add the long grain rice and stir well to coat the grains in the oil and spices. Pour in the chopped tomatoes and chicken stock. Stir everything together.
Simmer: Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
Season and Serve: Season with salt and pepper to taste. Garnish with sliced spring onions before serving.
