Homemade White Chocolate Strawberry Cupcakes
Ingredients:
For the cupcakes:
1 and 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
1/2 cup chopped fresh strawberries
For the white chocolate ganache:
8 ounces white chocolate, chopped
1/2 cup heavy cream
For the strawberry buttercream frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 cup chopped fresh strawberries
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Gently fold in the chopped strawberries.
Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cupcakes to cool completely on a wire rack.
While the cupcakes are cooling, make the white chocolate ganache. Place the chopped white chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes. Stir until smooth and creamy. Let the ganache cool slightly.
