Oven Baked Meatloaf and Potatoes

There is something deeply nostalgic about a meatloaf dinner. It’s the quintessential “home-cooked meal” that manages to be both humble and incredibly satisfying. Ingredients

1.2 lb 550 g ground beef

1/2 cup 60 g breadcrumbs

1/3 cup 80 ml milk

1 egg

1 small onion finely chopped

2 cloves garlic minced

1/4 cup 60 ml ketchup

2 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 tsp dried parsley

For the Potatoes

1.5 lb 700 g potatoes, cut into cubes

2 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Optional Glaze

1/4 cup 60 ml ketchup

1 tbsp brown sugar

1 tsp mustard

How To Make Oven Baked Meatloaf and Potatoes

Prepare the Oven & Pan

.Preheat oven to 375°F (190°C)

.Line a baking dish with parchment paper or lightly grease it

.Make the Meatloaf

In a large bowl, mix breadcrumbs + milk and let soak for 2 minutes

.Add ground beef, egg, onion, garlic, ketchup, Worcestershire sauce, and spices

.Mix gently until everything is evenly combined (avoid over-mixing).

.Shape into a loaf and place in the center of the baking dish.

.Add the Potatoes

In a bowl, toss potato cubes with olive oil, paprika, garlic powder, salt, and pepper.

.Arrange potatoes around the meatloaf in the same baking dish

.Optional Glaze

Mix ketchup + brown sugar + mustard.

.Brush the glaze over the top of the meatloaf

.Bake

Bake for 55–60 minutes, or until meatloaf reaches 160°F (71°C) inside

.If potatoes are browning too fast, cover with foil

.Rest & Serve

Let the meatloaf rest for 10 minutes before slicing.

Serve with the roasted potatoes.
