Creamy Pea Salad
Ingredients
4 cups frozen peas, thawed
8 slices bacon, cooked crispy and crumbled
1 cup sharp cheddar cheese, shredded
½ cup red onion, finely diced
3 hard-boiled eggs, chopped
¼ cup chopped fresh parsley (optional)
Dressing
¾ cup mayonnaise
¼ cup sour cream
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar or lemon juice
1 teaspoon sugar (optional)
½ teaspoon garlic powder
Salt and black pepper, to taste
Instructions
Cook the bacon until crisp, then crumble it. Hard-boil and chop the eggs.
In a large bowl, combine the peas, bacon, cheddar cheese, red onion, eggs, and parsley.
In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, vinegar, sugar, garlic powder, salt, and pepper.
Pour the dressing over the salad and gently toss until everything is evenly coated.
Cover and refrigerate for at least 1 hour before serving to let the flavors blend.
Garnish with extra bacon, cheese, or chopped parsley if desired.
