Eggs, Bacon & Potato-Apple Galettes

Ingredients

  • 4 medium firm potatoes, peeled
  • 1 Granny Smith apple, peeled and cored
  • 2 eggs
  • 8 slices bacon
  • 2 tbsp flour
  • 1 small onion, finely grated (optional)
  • Salt and black pepper
  • 2 tbsp butter or oil
  • Fresh parsley or chives (optional)

Instructions

  1. Prepare the mixture
    Grate the potatoes and apple using a coarse grater. Place in a clean towel and squeeze out as much liquid as possible.
  2. Mix ingredients
    Put the grated potato and apple in a bowl. Add eggs, flour, onion (if using), salt, and pepper. Mix well.
  3. Cook the bacon
    Fry the bacon in a skillet until crispy. Remove and set aside.
  4. Cook the galettes
    In the same pan, add butter or oil if needed. Spoon portions of the potato mixture into the pan and flatten into small pancakes.
  5. Fry until golden
    Cook 4–5 minutes per side over medium heat until crispy and golden brown.
  6. Serve
    Top each galette with crispy bacon. Add a fried or poached egg if desired. Garnish with parsley or chives.

Serving Idea

Serve hot with sour cream, mustard, or a green salad.
