Eggs, Bacon & Potato-Apple Galettes
Ingredients
- 4 medium firm potatoes, peeled
- 1 Granny Smith apple, peeled and cored
- 2 eggs
- 8 slices bacon
- 2 tbsp flour
- 1 small onion, finely grated (optional)
- Salt and black pepper
- 2 tbsp butter or oil
- Fresh parsley or chives (optional)
Instructions
- Prepare the mixture
Grate the potatoes and apple using a coarse grater. Place in a clean towel and squeeze out as much liquid as possible. - Mix ingredients
Put the grated potato and apple in a bowl. Add eggs, flour, onion (if using), salt, and pepper. Mix well. - Cook the bacon
Fry the bacon in a skillet until crispy. Remove and set aside. - Cook the galettes
In the same pan, add butter or oil if needed. Spoon portions of the potato mixture into the pan and flatten into small pancakes. - Fry until golden
Cook 4–5 minutes per side over medium heat until crispy and golden brown. - Serve
Top each galette with crispy bacon. Add a fried or poached egg if desired. Garnish with parsley or chives.
Serving Idea
Serve hot with sour cream, mustard, or a green salad.
