Hawaiian Crockpot Chicken
π§Ύ Ingredients
- 2 lbs boneless skinless chicken breasts or thighs
- 1 can (20 oz) pineapple chunks (with juice)
- Β½ cup soy sauce (low-sodium recommended)
- β cup brown sugar
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tbsp ketchup (optional, adds depth)
- 2 tbsp cornstarch + 2 tbsp water (optional, to thicken)

- Place chicken in the crockpot.
- Add pineapple with juice, soy sauce, brown sugar, garlic, ginger, and ketchup.
- Stir gently to coat chicken.
- Cook:
- LOW: 6β7 hours
- HIGH: 3β4 hours
- Shred chicken with two forks.
- (Optional) For thicker sauce: stir in cornstarch slurry and cook 15 more minutes on HIGH.
