Ingredients:
– 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 cups uncooked white rice
– 3 cups chicken broth
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 cup mixed frozen vegetables (e.g., peas, carrots, corn)
– 1 teaspoon dried thyme
– Salt and pepper, to taste
– 1/4 cup grated cheddar cheese (optional)
Instructions:
