🛒 Ingredients:
200 g digestive biscuits
100 g melted butter
400 g cream cheese (softened)
200 ml whipping cream (cold)
150 g fresh strawberries
100 g sugar
10 g unflavored gelatin
50 ml water

  1. Make the crust:
    Crush the digestive biscuits into fine crumbs (use a blender or rolling pin).
    Mix with melted butter until well combined.
    Press the mixture firmly into the bottom of a springform pan.
    Chill in the fridge for 20–30 minutes to set.
  2. Prepare the gelatin:
    In a small bowl, sprinkle gelatin over 50 ml water.
    Let it sit for 5–10 minutes to bloom.
    Heat gently until fully dissolved (do not boil). Set aside.
  3. Prepare the strawberry mixture:
    Wash and blend strawberries until smooth.
    Optional: strain for a smoother texture.
  4. Make the filling:
    In a bowl, beat cream cheese and sugar until smooth and creamy.
    Add strawberry puree and mix well.
    In another bowl, whip the cream until soft peaks form.
    Fold the whipped cream gently into the strawberry mixture.
    Slowly pour in the dissolved gelatin while mixing continuously.
  5. Assemble:
    Pour the filling over the chilled crust.
    Smooth the top with a spatula.
  6. Chill:
    Refrigerate for at least 6 hours or overnight until fully set.
  7. Serve:
    Decorate with fresh strawberries 🍓
    Slice and enjoy chilled!
