Savory Chicken in Creamy Spinach, Bacon & Mushroom Sauce
Ingredients:
2 tablespoons olive oil
4 slices bacon
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1 teaspoon paprika
1 teaspoon garlic powder
3 cloves garlic (minced)
1 cup mushrooms (sliced)
2 cups fresh spinach
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
Instructions:
Cook the bacon:
In a large skillet over medium heat, cook bacon until crispy.
Remove and crumble. Set aside.
Leave a little bacon fat in the pan for flavor.
Season & cook chicken:
Season chicken with salt, pepper, paprika, and garlic powder.
Add olive oil to the skillet and cook chicken for 5–6 minutes per side until golden and cooked through.
Remove and set aside.
Sauté garlic & mushrooms:
In the same pan, add garlic and cook for 30 seconds.
Add mushrooms and sauté until soft and lightly browned.
Add spinach:
Stir in spinach and cook until wilted.
Make the creamy sauce:
Pour in heavy cream and chicken broth.
Add Parmesan cheese and Italian seasoning.
Stir and let simmer for 3–5 minutes until slightly thickened.
Combine everything:
Return chicken to the pan and spoon sauce over it.
Add crumbled bacon on top.
Simmer:
Let everything cook together for another 5 minutes so flavors blend.
Serve:
Serve hot with pasta, rice, or mashed potatoes.
Tips:
Use chicken thighs for extra juiciness
Add a pinch of chili flakes for a little heat
For a lighter version, swap half the cream with milk
