Sausage Tortellini Soup Ingredients:
300 g Italian sausage (or any sausage), casing removed
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 can (400 g) crushed tomatoes
4 cups (1 liter) chicken broth
1 tsp Italian seasoning
1/2 tsp paprika
Salt & black pepper, to taste
200 g cheese tortellini (fresh or frozen)
1 cup (60 g) fresh spinach (or kale)
1/2 cup (120 ml) heavy cream (optional for creamy version)
Grated parmesan, for serving Instructions:
- Cook the sausage
Heat olive oil in a large pot
Add sausage and cook, breaking it up, until browned - Sauté vegetables
Add onion, carrot, and celery
Cook for 4–5 minutes until softened
Stir in garlic and cook 1 minute - Build the soup
Add crushed tomatoes, chicken broth, Italian seasoning, paprika
Season with salt & pepper
Bring to a boil, then reduce heat and simmer 10 minutes - Add tortellini
Stir in tortellini and cook according to package (about 3–5 minutes) - Finish
Add spinach and cook until wilted
Stir in cream (if using) for a richer texture - Serve
Ladle into bowls and top with grated parmesanTips:

Swap spinach for kale if you prefer
