Sausage Tortellini Soup
🧾 Ingredients:
300 g Italian sausage (or any sausage), casing removed
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 can (400 g) crushed tomatoes
4 cups (1 liter) chicken broth
1 tsp Italian seasoning
1/2 tsp paprika
Salt & black pepper, to taste
200 g cheese tortellini (fresh or frozen)
1 cup (60 g) fresh spinach (or kale)
1/2 cup (120 ml) heavy cream (optional for creamy version)
Grated parmesan, for serving 🧀
👩‍🍳 Instructions:

  1. Cook the sausage
    Heat olive oil in a large pot
    Add sausage and cook, breaking it up, until browned
  2. Sauté vegetables
    Add onion, carrot, and celery
    Cook for 4–5 minutes until softened
    Stir in garlic and cook 1 minute
  3. Build the soup
    Add crushed tomatoes, chicken broth, Italian seasoning, paprika
    Season with salt & pepper
    Bring to a boil, then reduce heat and simmer 10 minutes
  4. Add tortellini
    Stir in tortellini and cook according to package (about 3–5 minutes)
  5. Finish
    Add spinach and cook until wilted
    Stir in cream (if using) for a richer texture
  6. Serve
    Ladle into bowls and top with grated parmesan

    Use spicy sausage for extra kick 🌶️
    Swap spinach for kale if you prefer
    Add a splash of cream cheese for extra richness
    Make it lighter by skipping cream
