Ingredients
6 medium Potato, peeled and diced
1 small Onion, chopped
2 Celery stalks, chopped
2 tablespoons Butter
3 cups Chicken broth or vegetable broth
1 cup milk
½ cup Heavy cream (optional for extra richness)
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons all-purpose flour (for thickening)
2 tablespoons chopped parsley
Optional Additions
½ cup shredded Cheddar cheese
3 slices crispy bacon, crumbled
½ cup diced carrots
2 tablespoons sour cream
Instructions
- Cook the Vegetables
In a large pot, melt butter over medium heat. Add onion and celery and cook for 4–5 minutes until softened. - Add Potatoes and Broth
Stir in the diced potatoes and pour in the chicken broth. Bring to a boil. - Simmer
Reduce heat and simmer for 15–20 minutes, or until the potatoes are tender. - Thicken the Soup
In a small bowl, whisk the flour with a little milk to make a smooth mixture. Stir it into the soup. - Add Milk and Cream
Pour in the remaining milk and cream. Cook for 5 minutes, stirring gently until the soup thickens. - Season
Add salt, pepper, and parsley. Taste and adjust seasoning if needed. - Serve
