Ingredients(1 serving)
3 large eggs
1 tablespoon butter
Salt and black pepper, to taste
1/2 ripe avocado, sliced
1/2 banana, sliced
1/2 cup blueberries
1/2 cup blackberries
1 teaspoon chia seeds
1-2 teaspoons honey (or hot honey for a sweet-spicy twist)
.Small handful of microgreens or baby greens (optional)
Instructions
Crack the eggs into a bowl, season with a pinch of salt, and whisk until smooth.
Melt the butter in a nonstick skillet over low-medium heat.
Pour in the eggs and stir gently with a spatula until they become soft, creamy scrambled eggs. Remove from the heat before they’re fully set.
Transfer the eggs to a serving bowl.
Arrange the avocado slices, blueberries, blackberries, and banana around the eggs.
Sprinkle chia seeds over the eggs and fruit.
Drizzle honey (or hot honey) over the scrambled eggs.
Garnish with microgreens if desired and serve immediately.
