🥔 Slow Cooker Irish Potatoes

Ingredients:

  • 1.5–2 kg potatoes (Yukon Gold or red potatoes work best)
  • 1 onion, sliced
  • 3–4 cloves garlic, minced
  • 3 tbsp butter
  • 1/2 cup chicken broth
  • Salt (about 1 tsp, or to taste)
  • Black pepper (1/2 tsp)
  • 1 tsp dried parsley (or fresh at the end)
  • Optional: 1/2 cup shredded cheddar cheese

Instructions:

  1. Wash and cut potatoes into chunks (no need to peel if you like the skins).
  2. Add potatoes, onion, and garlic to the slow cooker.
  3. Pour in the broth and sprinkle salt, pepper, and parsley.
  4. Dot the top with butter.
  5. Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  6. Once tender, gently stir. Add cheese if using and let it melt for 10 minutes.
  7. Taste and adjust seasoning before serving.

Add chopped cabbage during the last hour for a simple colcannon-style version.
