Ingredients

  • 2 large eggs
  • 1 cup shredded mozzarella
  • ¼ cup grated parmesan

Instructions

  1. Preheat oven to 200°C / 400°F. Line a tray with parchment paper.
  2. Separate eggs
    Put whites in one bowl, yolks in another.
  3. Mix yolks
    Stir yolks with mozzarella and parmesan until combined.
  4. Whip whites
    Beat egg whites until stiff peaks form.
  5. Fold together
    Gently fold whites into cheese mixture.
  6. Shape
    Spoon small mounds onto tray.
  7. Bake
    Bake 12–15 minutes until golden.
  8. Cool slightly and enjoy.
