French Onion Smothered Chicken with Mushrooms 🧀🍄🍗🧅

Ingredients:

  • 2 large chicken breasts, halved horizontally
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 cup chicken broth
  • 1 cup shredded mozzarella or Swiss cheese
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and garlic powder. Sear the chicken for 3-4 minutes on each side until golden. Remove and set aside.
  3. In the same skillet, melt the butter and sauté the onions until caramelized, about 10 minutes. Add mushrooms and thyme, cooking for another 5 minutes until softened.
  4. Pour in the chicken broth and simmer for 3-4 minutes, allowing the flavors to combine.
  5. Return the chicken to the skillet and spoon the onion-mushroom mixture over the chicken.
  6. Sprinkle the shredded cheese on top of each piece of chicken. Transfer the skillet to the oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Garnish with fresh parsley and serve hot with a side of mashed potatoes or steamed vegetables.
