Ingredients

Peaches

• 6–8 fresh peaches, peeled & sliced

or 2 (29-oz) cans sliced peaches, drained (reserve ½ cup syrup)

• ¾–1 cup sugar (adjust to taste)

• 1 tsp cinnamon

• ¼ tsp nutmeg (optional but good)

• 1 tsp vanilla extract

• 1 tbsp lemon juice

• 2 tbsp cornstarch (for thick filling)

• Pinch of salt

Cobbler Batter

• 1 stick (½ cup) unsalted butter

• 1 cup all-purpose flour

• 1 cup sugar

• 1 tbsp baking powder

• ¼ tsp salt

• 1 cup milk

Instructions

  1. Preheat oven to 350°F.
  2. Melt butter

Place butter in a 9×13 baking dish and put it in the oven until melted. Remove and set aside.

  1. Make peach filling

In a bowl, mix peaches, sugar, cinnamon, nutmeg, vanilla, lemon juice, cornstarch, salt, and reserved syrup (if using canned).

  1. Make batter

In another bowl, whisk flour, sugar, baking powder, and salt. Stir in milk until smooth.

  1. Assemble (don’t stir!) • Pour batter over melted butter • Spoon peaches evenly over batter • Do not mix
  2. Bake

Bake uncovered for 45–55 minutes, until golden brown and bubbling.

  1. Cool slightly

Let rest 10–15 minutes to set.
