Ingredients

  • 1 lb Kielbasa, sliced
  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup milk or heavy cream (optional for a creamy soup)
  • 1 tbsp olive oil or butter
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Brown the sausage
    Heat olive oil in a large pot over medium heat. Add the sliced Kielbasa and cook 4–5 minutes until lightly browned. Remove and set aside.
  2. Cook the vegetables
    In the same pot, add onion, carrots, and celery. Cook about 5 minutes until softened. Add garlic and cook another 30 seconds.
  3. Add potatoes and broth
    Stir in diced potatoes, paprika, and black pepper. Pour in chicken broth and bring to a boil.
  4. Simmer
    Reduce heat and simmer for about 15 minutes until the potatoes are tender.
  5. Finish the soup
    Return the sausage to the pot. Add milk or cream if you want a creamy soup. Simmer another 5 minutes.
  6. Serve
    Stir in cheese until melted (optional). Sprinkle with fresh parsley and serve hot.
