🍋 Vanilla / Lemon Swiss Roll

Ingredients (Sponge)

  • 4 large eggs
  • ¾ cup sugar
  • ¾ cup cake flour (or all-purpose, sifted)
  • 1 tsp vanilla
  • 1 tsp lemon zest (optional)
  • ¼ tsp salt

Filling

  • 1½ cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C)
    Line a 10×15 jelly roll pan with parchment
  2. Beat eggs + sugar 5 minutes until thick and pale
  3. Fold in flour, salt, vanilla (and zest)
  4. Spread evenly in pan
  5. Bake 10–12 minutes (do not overbake)
  6. Turn out onto powdered-sugar towel, roll while warm
  7. Cool completely
  8. Whip cream + sugar + vanilla
  9. Unroll, fill, reroll
  10. Chill 1 hour

🍫 Chocolate Swiss Roll (Black Forest Style)

Ingredients (Sponge)

  • 4 eggs
  • ¾ cup sugar
  • ½ cup flour
  • ¼ cup cocoa powder
  • ¼ tsp salt
  • 1 tsp vanilla

Filling

  • 1½ cups whipped cream
  • ¼ cup powdered sugar
  • Optional: chopped cherries

Topping

  • Whipped cream
  • Chocolate shavings
  • Cherries

Instructions

Same method as vanilla, but fold cocoa with flour.
Decorate with whipped cream, chocolate curls, and cherries 🍒
