🧾 Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp sugar (optional)
  • 2 eggs
  • 1½ cups milk or buttermilk
  • ¼ cup oil or melted butter
  • 1 cup shredded cheese (cheddar, gouda, or mozzarella)
  • 2 tbsp mixed seeds (flax, sesame, sunflower, pumpkin)
  • Optional: 1 tsp dried herbs (thyme or rosemary)

Topping

  • 2–3 tbsp mixed seeds
  • 1 tbsp grated cheese

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk flour, baking powder, salt, sugar, seeds, and herbs.
  3. In another bowl, whisk eggs, milk, and oil.
  4. Stir wet ingredients into dry just until combined (batter will be thick).
  5. Fold in shredded cheese.
  6. Spoon batter into pan and smooth top.
  7. Sprinkle with seeds and cheese.
  8. Bake 45–50 minutes until golden and a toothpick comes out clean.
  9. Cool 10 minutes, then slice.
