Super Moist Coconut Custard Cake

🌟 Ingredients

For the cake (everything goes in the blender!)

  • 1 can sweetened condensed milk (14 oz / 395 g)
  • 1 can evaporated milk (12 oz / 354 ml) or regular milk
  • 1 can coconut milk (13.5 oz / 400 ml)
  • 4 eggs
  • 1 cup sugar
  • ½ cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup grated coconut (optional but traditional)
  • 1 tbsp baking powder
  • Pinch of salt

🥥 Instructions

1. Preheat oven

350°F (175°C).

2. Blend everything

Put all ingredients into a blender.
Blend until completely smooth (about 1–2 minutes).

3. Pour into a greased pan

Use a 9×13 inch pan or a deep round cake pan.

The batter will be very thin — that’s normal!
It bakes into a custard-like cake with its own creamy layers.

4. Bake

Bake 45–55 minutes, or until the top is golden and slightly caramelized.

The center will be moist and pudding-like — not dry like a normal cake.

5. Cool before cutting

Let cool at least 20 minutes to firm up.


✨ Optional Coconut Glaze (makes it irresistible)

Mix:

  • 1 cup coconut milk
  • ½ cup sweetened condensed milk
  • ½ cup grated coconut

Warm briefly and pour over warm cake.
