Christmas Soft Lemon Cookies
✅ Ingredients (Cookies)
- ½ cup (115 g) unsalted butter, softened
- ½ cup (100 g) white sugar
- ½ cup (120 g) sour cream or Greek yogurt
- 1 egg
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
🍋 Ingredients (Lemon Glaze)
- 1 cup (120 g) powdered sugar
- 1–2 tbsp lemon juice (adjust for thickness)
- Optional: Christmas sprinkles
👩🍳 Instructions
1. Make the dough
- Beat butter + sugar until light and creamy.
- Add egg, sour cream/yogurt, lemon juice, lemon zest, vanilla — mix until smooth.
- In a separate bowl, whisk together:
- flour
- baking powder
- baking soda
- salt
- Add dry ingredients to wet ingredients and mix gently until just combined.
- Chill dough for 20–30 minutes (helps cookies stay thick and soft).
2. Bake
- Preheat oven to 350°F (175°C).
- Scoop dough using a tablespoon or cookie scoop onto a parchment-lined tray.
- Bake 10–12 minutes, just until the bottoms are lightly golden.
- Cookies should remain pale and soft.
3. Glaze
- Mix powdered sugar + lemon juice until smooth.
- Dip the tops of cooled cookies or drizzle glaze over them.
- Add sprinkles for a Christmas touch.
