Ingredients:

2 lbs chicken pieces (drumsticks, wings, or thighs)

1 cup buttermilk (or milk + 1 tsp vinegar as a substitute)

1 cup flour

1/2 cup cornstarch

1 tsp salt

1 tsp paprika

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional for heat)

1 tbsp oil or spray for coating

Directions:

Marinate: In a bowl, pour buttermilk over the chicken and let it soak for 30 minutes to 2 hours (for tenderness and flavor).

Coating: In another bowl, mix flour, cornstarch, and all seasonings.

Remove chicken from buttermilk, shake off excess, and coat evenly in the flour mix.

Lightly spray the air fryer basket with oil.

Arrange the chicken in a single layer (don’t overcrowd).

Spray or brush a little oil on top of each piece for crispiness.

Air fry at 375°F (190°C) for 25–30 minutes, flipping halfway through.

Check that the internal temperature reaches 165°F (74°C) — crispy outside, juicy inside!

Tips:

For extra crunch, double-dip the chicken (buttermilk → flour → buttermilk → flour).

Let the chicken rest 5 minutes before serving — it helps the crust stay crisp.

Try adding a drizzle of honey or hot sauce for flavor!
