Easy Chicken Quesadillas Ingredients:
2 cups cooked chicken, shredded (rotisserie works great)
4 large tortillas
1 1/2 cups shredded cheese (cheddar, mozzarella, or a mix)
1/2 onion, thinly sliced
1/2 bell pepper, sliced
1 tbsp olive oil or butter
1/2 tsp paprika
1/2 tsp garlic powder
Salt & black pepper, to taste Instructions
- Prepare filling
Heat oil in a pan over medium heat
Add onion and bell pepper → cook 3–4 minutes until soft
Add chicken, paprika, garlic powder, salt & pepper
Stir and heat through for 2–3 minutes - Assemble quesadillas
Place a tortilla in a pan
Sprinkle a layer of cheese
Add chicken mixture
Top with more cheese
Cover with another tortilla (or fold in half) - Cook
Cook on medium heat for 2–3 minutes per side
Press lightly and flip when golden and crispy - Slice & serve
