Flourless Cake, Soft and Delicious

Ingredients:
• 3 tablespoons sugar
• 3 tablespoons starch (cornstarch)
• 2 cups Greek yogurt (300–400 g)
• 4 eggs
• A pinch of salt and baking powder (or baking soda)

Preparation Method:

You will need 2 bowls.
1. In one bowl, add the 4 egg yolks, and in another bowl, add the 4 egg whites. Add sugar to the yolks and mix well for about 5 minutes. Add the starch and baking powder, and mix until you get a smooth mixture.
2. Add the yogurt and mix for about 10 minutes. Let this mixture rest while you prepare the second one.
3. Beat the egg whites for about 20 minutes, until you get a light, airy foam (stiff peaks).
4. Gently combine the contents of the two bowls, mixing slowly by hand until you get a homogeneous batter.
5. Choose a baking pan, preferably as large as possible. Line it with parchment paper, making sure the paper extends beyond the edges of the pan.
6. Preheat the oven to 180°C (356°F). Bake for 30–40 minutes, checking for doneness.
7. Remove the cake from the oven and let it cool for 10–15 minutes. Sprinkle with powdered sugar.
