This light and airy chiffon cake is infused with tropical guava flavor and topped with a luscious pink guava whipped cream frosting.
Ingredients
For the Cake:
1 1/2 cups cake flour
1 cup granulated sugar (divided)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 large eggs, separated
1/2 cup guava juice (preferably pink guava)
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 teaspoon cream of tartar
For the Guava Filling:
1 cup guava juice
2 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon water
For the Guava Frosting:
1 cup heavy whipping cream
3 tablespoons powdered sugar
1/4 cup guava puree (or thick guava juice)
1 teaspoon vanilla extract
Instructions
- Prepare the Cake Batter
Preheat your oven to 325°F (160°C).
In a large bowl, whisk together the cake flour, baking powder, salt, and 1/2 cup of sugar.
Add egg yolks, guava juice, vegetable oil, and vanilla extract. Mix until smooth and well combined. - Whip the Egg Whites
In a separate clean bowl, beat the egg whites with cream of tartar until soft peaks form.
Gradually add the remaining 1/2 cup sugar, beating until stiff peaks form. - Combine Batter
Gently fold the whipped egg whites into the batter in 3 additions.
Be careful not to deflate the mixture—this keeps the cake light and airy. - Bake the Cake
Pour the batter into an ungreased chiffon cake pan.
Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
Invert the pan immediately and let the cake cool completely before removing. - Make the Guava Filling
In a small saucepan, combine guava juice and sugar over medium heat.
Mix cornstarch with water, then add to the saucepan.
Stir continuously until the mixture thickens.
Remove from heat and let it cool completely. - Prepare the Guava Frosting
In a chilled bowl, whip the heavy cream until soft peaks form.
Add powdered sugar, guava puree, and vanilla extract.
Continue whipping until light and fluffy. - Assemble the Cake
Slice the cooled cake horizontally into layers.
Spread guava filling between each layer.
Frost the entire cake with the guava whipped cream frosting.
