Mini Meatloaf Muffins with Mashed Potato Frosting
A fun, comfort-food twist on classic meatloaf—individual “muffins” topped with creamy mashed potatoes like frosting. Perfect for family dinners or meal prep! Ingredients (Makes 10–12 muffins)
Meatloaf Muffins:
500 g (1 lb) ground beef
1/2 cup breadcrumbs
1/3 cup milk
1 small onion (finely chopped)
2 cloves garlic (minced)
1 large egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika Glaze:
1/4 cup ketchup
1 tbsp brown sugar
1 tsp mustard Mashed Potato “Frosting”:
3–4 medium potatoes (peeled and cubed)
2 tbsp butter
1/4 cup milk (warm)
Salt & pepper to taste Instructions
- Prepare Potatoes
Boil potatoes in salted water until tender (15–20 minutes)
Drain and mash with butter, warm milk, salt, and pepper
Mash until smooth and creamy, then set aside - Make Meat Mixture
Preheat oven to 180°C (350°F)
In a bowl, combine:
ground beef
breadcrumbs + milk
onion, garlic
egg
ketchup & Worcestershire
spices
Mix gently until combined - Shape Muffins
Grease a muffin tin
Divide mixture evenly into cups
Press lightly to shape - Add Glaze
Mix glaze ingredients
Spoon a little over each meatloaf muffin - Bake
Bake for 20–25 minutes until cooked through - Frost with Potatoes
Let muffins cool slightly
Pipe or spoon mashed potatoes on top like frosting - Optional Finish
