Homemade Beef Vegetable Soup
Ingredients:
1 lb (450g) beef stew meat (cut into bite-sized pieces)
2 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, peeled and diced
1 cup green beans (fresh or frozen)
1 cup corn (optional)
1 can (14 oz / 400g) diced tomatoes
6 cups beef broth
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp dried thyme
1 tsp paprika
1 bay leaf
Instructions:
- Brown the beef
Heat olive oil in a large pot over medium-high heat.
Add beef and sear until browned on all sides (about 5–7 minutes). Remove and set aside. - Sauté aromatics
In the same pot, add onion, carrots, and celery.
Cook for 4–5 minutes until softened.
Add garlic and cook 1 more minute. - Build the soup
Return beef to the pot.
Add potatoes, green beans, corn, diced tomatoes, and beef broth. - Season & simmer
Add salt, pepper, thyme, paprika, and bay leaf.
Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes, until beef is tender. - Taste & finish
Adjust seasoning if needed. Remove bay leaf before serving.
