1/4 cup coconut flour

3 tbsp powdered erythritol (or preferred keto sweetener)
6 large eggs (room temperature)
1/2 cup melted butter
1/4 cup heavy cream
1 tbsp apple cider vinegar
1 tsp vanilla extract

Set oven to 175°C (350°F)
Line a loaf pan with parchment paper - Mix dry ingredients
In a bowl, whisk:
Almond flour
Coconut flour
Baking powder
Salt
Sweetener - Mix wet ingredients
In another bowl, beat:
Eggs
Melted butter
Heavy cream
Apple cider vinegar
Vanilla extract - Combine
Add wet ingredients into dry
Mix until smooth, thick batter forms
Let sit 2–3 minutes (coconut flour absorbs liquid) - Bake
Pour into loaf pan
Smooth top
Bake 40–50 minutes until golden and firm - Cool
