Meatloaf and Mashed Potatoes with Gravy

Ingredients

For the Meatloaf:

  • 1½ lb ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning

For the Mashed Potatoes:

  • 2 lb potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup warm milk or cream
  • Salt and black pepper to taste

For the Gravy:

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

 Instructions

Step 1: Prepare the Meatloaf

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix gently until just combined.
  3. Shape the mixture into a loaf and place in a baking dish or loaf pan.
  4. Bake for 50–60 minutes, until fully cooked and nicely browned.
  5. Let rest for 10 minutes before slicing.

Step 2: Make the Mashed Potatoes

  1. Boil potatoes in salted water for 15–20 minutes, until fork-tender.
  2. Drain well.
  3. Mash with butter and warm milk until smooth and creamy.
  4. Season with salt and pepper to taste.

Step 3: Prepare the Gravy

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour and cook for 1–2 minutes.
  3. Gradually add beef broth while whisking continuously until smooth.
  4. Simmer until thickened.
  5. Season with Worcestershire sauce, salt, and pepper.

 Serving

Serve thick slices of meatloaf over creamy mashed potatoes and generously spoon warm gravy on top.
