Kielbasa Soup with Potatoes is a hearty, comforting soup made with smoky Polish sausage, tender potatoes, and simple vegetables. It’s perfect for cold days and comes together in one pot.
Ingredients
- 1 lb Kielbasa, sliced
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup milk or heavy cream (optional for a creamy soup)
- 1 tbsp olive oil or butter
- 1 tsp paprika
- ½ tsp black pepper
- Salt to taste
- 1 cup shredded cheddar cheese (optional)
- 2 tbsp fresh parsley, chopped
Instructions
- Brown the sausage
Heat olive oil in a large pot over medium heat. Add the sliced Kielbasa and cook 4–5 minutes until lightly browned. Remove and set aside. - Cook the vegetables
In the same pot, add onion, carrots, and celery. Cook about 5 minutes until softened. Add garlic and cook another 30 seconds. - Add potatoes and broth
Stir in diced potatoes, paprika, and black pepper. Pour in chicken broth and bring to a boil. - Simmer
Reduce heat and simmer for about 15 minutes until the potatoes are tender. - Finish the soup
Return the sausage to the pot. Add milk or cream if you want a creamy soup. Simmer another 5 minutes. - Serve
Stir in cheese until melted (optional). Sprinkle with fresh parsley and serve hot.

- Add cabbage or kale for extra flavor.
- A spoon of sour cream on top makes it even richer.
- Serve with crusty bread to soak up the broth.
