• 3 Tbsp tomato paste
• 1 Tbsp Worcestershire sauce
• 4 large carrots, cut into chunks
• 1½ lb baby potatoes (or regular potatoes cut into chunks)
• 1 tsp dried thyme
• 1 tsp dried rosemary
• 2 bay leaves

1️⃣ Season the beef
Pat the chuck roast dry with paper towels and season generously with salt and freshly ground black pepper.
2️⃣ Sear for flavor
Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Sear the roast for about 4–5 minutes per side until a deep brown crust forms. This step adds incredible flavor.
3️⃣ Cook the aromatics
Remove the roast temporarily and add the chopped onion to the pot. Cook for about 3–4 minutes until slightly softened, then stir in the garlic and cook another minute.
