Moist Pineapple Cake

Ingredients

  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 2 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple — DO NOT DRAIN
  • ½ cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 pan.
  2. Mix dry ingredients: flour, sugar, baking soda, salt.
  3. Add wet ingredients: eggs, crushed pineapple (with juice), oil, vanilla.
  4. Stir until just combined (don’t overmix).
  5. Pour into pan and smooth top.
  6. Bake 35–40 minutes, until a toothpick comes out clean.
  7. Cool completely before frosting.

🧁 Optional Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla

Beat until smooth and spread over cooled cake.


🌟 Variations

  • Pineapple Coconut Cake: Add 1 cup shredded coconut
  • Pineapple Walnut Cake: Add ½ cup chopped nuts
  • Pineapple Upside-Down Style: Add maraschino cherries on top before baking
