Moist Pineapple Cake
Ingredients
- 2 cups all-purpose flour
- 1½ cups sugar
- 2 tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1 can (20 oz) crushed pineapple — DO NOT DRAIN
- ½ cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 pan.
- Mix dry ingredients: flour, sugar, baking soda, salt.
- Add wet ingredients: eggs, crushed pineapple (with juice), oil, vanilla.
- Stir until just combined (don’t overmix).
- Pour into pan and smooth top.
- Bake 35–40 minutes, until a toothpick comes out clean.
- Cool completely before frosting.
🧁 Optional Cream Cheese Frosting
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla
Beat until smooth and spread over cooled cake.

- Pineapple Walnut Cake: Add ½ cup chopped nuts
- Pineapple Upside-Down Style: Add maraschino cherries on top before baking
