Crispy Baked Parmesan Zucchini Rounds

Description

These baked zucchini rounds are lightly crisp on the outside, tender inside, and coated with a golden Parmesan crust. They are a perfect appetizer, side dish, or low-carb snack. Baking keeps them light while still delivering excellent texture and flavor.

Ingredients

  • 2 medium zucchini
  • ½ cup freshly grated Parmesan cheese
  • ½ cup breadcrumbs or panko (optional but recommended for extra crunch)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

Step 1: Prepare the Zucchini

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Wash zucchini and slice into ¼-inch thick rounds.
  4. Pat slices dry with paper towels to remove excess moisture.

Step 2: Season

  1. Place zucchini slices in a bowl.
  2. Drizzle with olive oil and toss until evenly coated.

Step 3: Coat

  1. In a separate bowl, mix Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Press each zucchini slice firmly into the cheese mixture, coating both sides.

Step 4: Bake

  1. Arrange zucchini in a single layer on the baking sheet.
  2. Bake for 18–22 minutes, flipping halfway through.
  3. For extra browning, broil for 1–2 minutes at the end.

Step 5: Finish

  1. Remove from oven and let rest for 2 minutes.
  2. Garnish with chopped parsley if desired.
  3. Serve immediately while crisp.
