Chocolate Coconut Snowball Truffles (Mounds Copycat)

Ingredients

  • 2½ cups sweetened shredded coconut
  • ¾ cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or butter (for smooth chocolate)
  • Extra shredded coconut for topping

Instructions

  1. Make the coconut filling
    In a bowl, mix coconut, condensed milk, and vanilla until sticky.
  2. Form balls
    Roll into 1–1½ inch balls.
    Place on a parchment-lined tray.
  3. Chill
    Refrigerate for 30 minutes (or freeze 15 minutes).
  4. Melt chocolate
    Melt chocolate chips with coconut oil until smooth.
  5. Dip
    Dip each ball in chocolate, letting excess drip off.
  6. Coat with coconut
    Roll immediately in shredded coconut or sprinkle on top.
  7. Set
    Chill until chocolate is firm.

  • Almond Joy: Press an almond into the center
  • Extra creamy: Add 2 tbsp cream cheese to the filling
  • Holiday look: Add white chocolate drizzle
