Sheet-Pan Garlic Herb Pork Chops & Potatoes
Ingredients
- 4 bone-in or boneless pork chops
- 1½ lbs (700 g) baby potatoes, halved
- 3 tbsp olive oil
- 2 tbsp butter, melted
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp dried thyme or rosemary
- Salt & black pepper, to taste
- Optional: chili flakes, fresh parsley
Instructions
- Preheat oven
Set oven to 400°F (200°C). - Season potatoes
Toss potatoes with olive oil, half the garlic, salt, pepper, paprika, and herbs. Spread on sheet pan cut-side down. - Roast potatoes first
Bake 15 minutes to give them a head start. - Prepare pork chops
Mix melted butter, remaining garlic, salt, pepper, and Italian seasoning. Brush generously over pork chops. - Add pork to pan
Push potatoes aside and place pork chops on the pan. - Bake together
Return to oven and bake 15–20 minutes, flipping once, until pork reaches 145°F (63°C). - Optional crisp
Broil 2–3 minutes for extra color. - Rest & serve
Rest pork 5 minutes, garnish with parsley.
