Sheet-Pan Garlic Herb Pork Chops & Potatoes

Ingredients

  • 4 bone-in or boneless pork chops
  • 1½ lbs (700 g) baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tbsp butter, melted
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp dried thyme or rosemary
  • Salt & black pepper, to taste
  • Optional: chili flakes, fresh parsley

Instructions

  1. Preheat oven
    Set oven to 400°F (200°C).
  2. Season potatoes
    Toss potatoes with olive oil, half the garlic, salt, pepper, paprika, and herbs. Spread on sheet pan cut-side down.
  3. Roast potatoes first
    Bake 15 minutes to give them a head start.
  4. Prepare pork chops
    Mix melted butter, remaining garlic, salt, pepper, and Italian seasoning. Brush generously over pork chops.
  5. Add pork to pan
    Push potatoes aside and place pork chops on the pan.
  6. Bake together
    Return to oven and bake 15–20 minutes, flipping once, until pork reaches 145°F (63°C).
  7. Optional crisp
    Broil 2–3 minutes for extra color.
  8. Rest & serve
    Rest pork 5 minutes, garnish with parsley.
