Cheesy Baked Meatball Casserole
🧾 Ingredients
Meatballs
- 1½ lbs ground beef (or beef/pork mix)
- ½ cup breadcrumbs
- 1 egg
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder

Creamy Cheese Sauce
- 2 cups shredded cheddar cheese
- 1 cup heavy cream or half-and-half
- 2 eggs
- ½ cup chopped bell peppers (red & green)
- ½ cup chopped onion
- 2 tbsp chopped green onions
- ½ tsp salt
- ½ tsp black pepper

1. Prepare meatballs
- Mix all meatball ingredients.
- Roll into medium-sized balls.
- Place raw meatballs into a greased baking dish.
2. Make cheese mixture
- In a bowl, whisk eggs and cream.
- Stir in cheese, peppers, onion, green onions, salt, and pepper.
3. Assemble
- Pour cheese mixture evenly over the meatballs.
4. Bake
- Cover with foil and bake at 375°F (190°C) for 35 minutes
- Uncover and bake 10–15 more minutes until bubbly and golden
