Spinach & Feta Puff Pastry Squares

🧾 Ingredients

  • 2 sheets puff pastry, thawed
  • 10 oz (300 g) frozen spinach, thawed & VERY well squeezed dry
  • 1 cup feta cheese, crumbled
  • ½ cup mozzarella or ricotta (optional but makes it creamy)
  • 1 egg (for filling)
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or melted butter
  • Salt & black pepper (to taste)
  • Optional: dill, parsley, or green onions
  • Sesame seeds (for topping)

👩‍🍳 Instructions

1. Preheat

Oven to 375°F (190°C).
Line a baking sheet with parchment.


2. Make the filling

In a bowl, mix:

  • spinach
  • feta
  • mozzarella/ricotta
  • 1 egg
  • garlic
  • olive oil
  • salt & pepper
  • herbs (if using)

Mix until well combined.


3. Assemble

  • Lay one puff pastry sheet on the baking tray.
  • Spread spinach filling evenly, leaving a small border.
  • Place the second pastry sheet on top.
  • Press edges gently to seal.

4. Cut & decorate

  • Lightly score into squares with a knife (don’t cut all the way through).
  • Brush with egg wash.
  • Sprinkle with sesame seeds.

5. Bake

Bake 30–35 minutes, until puffed and deep golden brown.

Let rest 10 minutes, then cut fully through and serve.

✔ Use cold pastry for maximum flake
