Spinach & Feta Puff Pastry Squares
🧾 Ingredients
- 2 sheets puff pastry, thawed
- 10 oz (300 g) frozen spinach, thawed & VERY well squeezed dry
- 1 cup feta cheese, crumbled
- ½ cup mozzarella or ricotta (optional but makes it creamy)
- 1 egg (for filling)
- 1 egg yolk + 1 tbsp milk (for egg wash)
- 2 cloves garlic, minced
- 2 tbsp olive oil or melted butter
- Salt & black pepper (to taste)
- Optional: dill, parsley, or green onions
- Sesame seeds (for topping)
👩🍳 Instructions
1. Preheat
Oven to 375°F (190°C).
Line a baking sheet with parchment.
2. Make the filling
In a bowl, mix:
- spinach
- feta
- mozzarella/ricotta
- 1 egg
- garlic
- olive oil
- salt & pepper
- herbs (if using)
Mix until well combined.
3. Assemble
- Lay one puff pastry sheet on the baking tray.
- Spread spinach filling evenly, leaving a small border.
- Place the second pastry sheet on top.
- Press edges gently to seal.
4. Cut & decorate
- Lightly score into squares with a knife (don’t cut all the way through).
- Brush with egg wash.
- Sprinkle with sesame seeds.
5. Bake
Bake 30–35 minutes, until puffed and deep golden brown.
Let rest 10 minutes, then cut fully through and serve.
