Extra Fluffy Pancakes (Diner-Style)
🧾 Ingredients (Makes 8–10 pancakes)
- 1½ cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder (key for fluffiness!)
- ½ tsp salt
- 1¼ cups milk
- 1 large egg
- 3 tbsp melted butter (or oil)
- 1 tsp vanilla extract (optional)
👩🍳 Instructions
1. Mix dry ingredients
In a bowl, whisk together:
- flour
- sugar
- baking powder
- salt
2. Mix wet ingredients
In another bowl, whisk:
- milk
- egg
- melted butter
- vanilla
3. Combine
Pour wet ingredients into dry.
Stir just until combined — lumps are GOOD.
(Overmixing = flat pancakes.)
Rest batter 5 minutes.
4. Cook
Heat a nonstick pan or griddle over medium heat.
Lightly grease.
Pour about ¼ cup batter per pancake.
Cook until bubbles form and edges look set (about 2–3 minutes).
Flip and cook 1–2 minutes until golden.

✔ Use baking powder, not baking soda
✔ Don’t overmix
✔ Medium heat (not high)
✔ Let batter rest 5 minutes
🥞 Variations
- Buttermilk pancakes: replace milk with buttermilk
- Blueberry: sprinkle berries after pouring batter
- Chocolate chip: add chips on top before flipping
