Creamy Spinach Chicken Meatballs (Baked)
🥩 Ingredients
Chicken Meatballs
- 1 lb ground chicken
- ½ cup breadcrumbs
- 1 egg
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- 1 cup fresh spinach, finely chopped
- ½ cup shredded mozzarella (for gooey centers)
Creamy Garlic Spinach Sauce
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup Parmesan cheese
- 1 cup fresh spinach
- Salt & pepper to taste
👩🍳 Instructions
1. Preheat
Oven to 375°F (190°C).
Line a baking dish with foil and lightly grease.
2. Make meatballs
In a bowl, mix:
- ground chicken
- breadcrumbs
- egg
- Parmesan
- garlic
- salt, pepper, Italian seasoning
- chopped spinach
Form into large meatballs.
Press a little mozzarella into the center of each and seal.
3. Brown meatballs
Heat a skillet with a little oil.
Brown meatballs on all sides (2–3 minutes per side).
They don’t need to cook through yet.
4. Make sauce
In the same skillet:
- melt butter
- sauté garlic (30 seconds)
- add cream and broth
- stir in Parmesan
- add spinach and cook until wilted
Season to taste.
5. Bake
Place meatballs in a baking dish.
Pour sauce over top.
Bake 20–25 minutes until cooked through and golden.
(Optional: broil 2–3 minutes for extra browning like the photo.)
