Fluffy Yogurt (or Kefir) Pan-Fried Pancakes
✅ Ingredients
- 2 cups (500 ml) kefir or plain yogurt
- 2 eggs
- 2–3 tbsp sugar (more if you like them sweet)
- 1 tsp vanilla sugar (optional)
- ½ tsp salt
- 2 ½ cups (300 g) flour
- 1 tsp baking soda
- Oil for frying (sunflower or neutral oil)
👩🍳 Instructions
1. Mix the wet ingredients
- In a bowl, whisk together:
- kefir/yogurt
- eggs
- sugar
- salt
- vanilla (optional)
2. Add flour
- Add flour gradually and mix gently.
The dough should be thick—almost like cake batter.
3. Add baking soda
- Add the baking soda last.
- Mix lightly; the batter will become airy and rise.
4. Heat the pan
- Add 2–3 tbsp of oil into a pan and heat over medium-low.
5. Form tall pancakes
- Scoop batter with a spoon or small mold to get the thick shape like in the photo.
- Fry 2–3 minutes per side until golden.
6. Serve
These are best served warm with:
- sour cream
- jam
- honey
- powdered sugar
