Fluffy Yogurt (or Kefir) Pan-Fried Pancakes

✅ Ingredients

  • 2 cups (500 ml) kefir or plain yogurt
  • 2 eggs
  • 2–3 tbsp sugar (more if you like them sweet)
  • 1 tsp vanilla sugar (optional)
  • ½ tsp salt
  • 2 ½ cups (300 g) flour
  • 1 tsp baking soda
  • Oil for frying (sunflower or neutral oil)

👩‍🍳 Instructions

1. Mix the wet ingredients

  • In a bowl, whisk together:
    • kefir/yogurt
    • eggs
    • sugar
    • salt
    • vanilla (optional)

2. Add flour

  • Add flour gradually and mix gently.
    The dough should be thick—almost like cake batter.

3. Add baking soda

  • Add the baking soda last.
  • Mix lightly; the batter will become airy and rise.

4. Heat the pan

  • Add 2–3 tbsp of oil into a pan and heat over medium-low.

5. Form tall pancakes

  • Scoop batter with a spoon or small mold to get the thick shape like in the photo.
  • Fry 2–3 minutes per side until golden.

6. Serve

These are best served warm with:

  • sour cream
  • jam
  • honey
  • powdered sugar
