Easy Pie Crust (3 Ingredients + Water)
Flaky, buttery, and takes only a few minutes.
✅ Ingredients
- 1 ¼ cups (155 g) all-purpose flour
- ½ cup (115 g) cold unsalted butter, cut into cubes
- ¼ tsp salt
- 3–5 tbsp ice water
👩🍳 Instructions
1. Mix dry ingredients
In a bowl, combine:
- Flour
- Salt
2. Cut in the butter
Add the cold cubed butter.
Use a pastry cutter or your fingertips to rub the butter into the flour until mixture looks like coarse crumbs with some pea-sized chunks of butter remaining.
(These chunks make it flaky.)
3. Add ice water
Drizzle in 3 tbsp of ice water.
Mix gently with a fork.
Add more water (1 tbsp at a time) until the dough just comes together and can be pressed into a ball.
4. Form and chill
Form the dough into a disk, wrap it, and chill for 30 minutes.
(Helps it roll out easily and stay flaky.)
5. Roll out
Roll on a lightly floured surface until it’s slightly larger than your pie dish.
6. Use in your recipe
- For pre-baking (blind bake): Bake 12–15 minutes at 375°F (190°C) with pie weights.
- For filled pies: Fill and bake according to your pie recipe.

- Butter must be cold, not soft.
- Handle dough as little as possible.
- If dough cracks when rolling, let it sit at room temp 5 minutes.
- For extra flavor, add 1 tsp sugar for sweet pies.
